Garlic

We have been making sausages here at Lavistown House for over twenty years. They were a result of many evenings around the kitchen table with bags of natural spices and glasses of wine and little mini tasters. They were a delicious secret that only a few people knew about because all our energies were going into making Lavistown Cheese. The cheese has now grown up and left home and we have turned our attention to producing a variety of fine gourmet sausages. With increased production we now buy the pork from a local farmer.

They are great for wheat intolerant diets as they contain no fillers…no additives either!

You can also get them in Ardkeen Stores in Waterford.

If you want to try them in a restaurant pop in to Café Sol and Sol Bistro, Kilkenny Design, Marble City Bar, The Waterside in Graiguenamanagh or Lennons at Visual, Carlow.

We will make BURGERS to order and if you like to make lasagne or bolognese with this delicious meat, forget all that squeezing and order the flavoured meat before it gets into the sausage!

LAVISTOWN CHEESE

After twenty five years of making Lavistown Cheese, I have been very fortunate to be able to hand on the business to Helen Finnegan of Knockdrinna Cheese in Stoneyford, Co Kilkenny.

Helen has been making goats, sheep and cows cheeses for three years and has already won numerous national and international awards. I am delighted that she agreed to take on Lavistown which has proved to be so popular for a quarter of a century.

Breda McEvoy, who worked with me for more than fifteen years is continuing to make Lavistown at Knockdrinna which is just five miles from her home in the opposite direction.
